It’s true that baking with einkorn flour has a bit of a learning curve. To boost your confidence while baking with einkorn flour, I recommend starting out with a simple baking recipe, like einkorn pie crust.
Not only can this einkorn pie crust be used to make sweet treats like Healthy Pop Tarts for breakfast food, but it can be used to make savory pies for dinner.
This recipe bakes up a flaky, moist crust, peppered with a sinister amount of butter. And sandwiched between all of that golden goodness is honey sweetened jam.
Breakfast food or snack food, I don’t feel guilty letting my kids eat these Healthy Pop Tarts With Einkorn Pie Crust Recipe.
Einkorn Pie Crust Ingredients
Einkorn Flour- When baking with einkorn flour, I generally use All Purpose Einkorn Flour. In fact, that is what I used for this einkorn pie crust recipe. If you don’t have or use einkorn flour, you can substitute whole wheat or white flour. You may need to reduce the amount of water used.
Butter- In order to get a flaky crust, it is crucial that you use cold butter. Using unsalted butter allows you to control the saltiness of the pie crust.
Egg- The addition of egg not only makes this einkorn pie crust recipe easier to roll out, but more pliable, too. Even if you are not using einkorn flour, add the egg.
Cold Water- Fill a glass measuring cup with water and a few ice cubes. This will keep your water chilled until you are ready to use it.
Apple Cider Vinegar– Vinegar helps to keep the dough tender. Don’t worry, you won’t taste the vinegar in your finished product.
Salt- Use a fine salt, like table salt. It works best for even distribution throughout the pie crust.
Buttermilk- Before baking, this is used for sealing the top and bottom einkorn pie crust together. It is also use for brushing the top pastry.
Tips for Working With Einkorn Flour Pie Crust 
- As mentioned, use cold butter and cold water. This is very important to get a flaky crust.
- After forming your dough and cutting it in two, wrap your dough in plastic wrap and refrigerate for 30 minutes. Again, this will ensure a flaky crust.
- You may find that you need more water than this recipe calls for. Add one tablespoon at a time, working it in until the correct dough consistency is reached.
- Einkorn flour dough is notoriously sticky. This einkorn pie crust recipe is no exception. Have extra flour at the ready to keep your work surface and rolling pin floured.
- Don’t roll your dough too thin! A 1/4″ thickness is optimal. Remember, this has a top and bottom piece of dough, so you also don’t want it to be too thick.
- If your dough seems warm after assembling your healthy Pop Tarts, place them on a baking sheet in the refrigerator for 10-15 minutes. This will give the butter a chance to firm back up before baking.
Healthy Pop Tart Filling
There are countless ways to fill your Healthy Pop Tart. Because I mainly serve this as a breakfast food, I like to keep most of the sugar out of it.
That’s why I fill my einkorn pie crust with my homemade honey sweetened jam. It’s a simply delicious canning recipe that sweetens the fruit with honey.
Feel free to use your imagination or whatever you have on hand. Things like apple pie filling, jelly and chocolate come to mind!
How To Cut And Shape Healthy Pop Tarts
While I could keep with tradition and cut the Pot Tarts into rectangles, I much prefer to take the road less traveled.
I use large cookie cutters to cut my einkorn pie crust into fun shaped healthy Pop Tarts. And you know what? My kids get so excited to see what shape their Pop Tart is!
Depending on the shape of your cookie cutter will depend on how many healthy Pop Tarts you end up with.
Just remember to always cut your shapes in even numbers, because you will need a top and a bottom to seal in the filling.
Topping Your Healthy Pop Tart
As with filling your healthy Pop Tart, there are several ways you can top it. Traditionally, Pop Tarts are adorned with a hard glaze that consists of sugar, dye and artificial flavors.
I top my Pop Tarts with a drizzle of honey right before I put them into the oven to bake. By putting the honey on before baking, it allows the honey to bake into the crust. As an added bonus, it creates a slight crunch to the top of the Pop Tart.
Adding the honey after baking is an option, but a messy one. Consequently, it will not store easily with this method. I would suggest eating them all instead!
Alternatively, the Pop Tarts can be brushed with buttermilk and sprinkled with sugar. This will give the tarts a nice shine and crunch.
How To Reheat Healthy Pop Tarts With Einkorn Pie Crust
While a traditional Pop Tart is heated in a toaster, that method will not work for these healthy pop tarts. Because they are homemade using einkorn flour, they do not have the same cardboard sturdiness that a traditional Pop Tart has.
The first method for reheating is my preferred method. First, preheat your oven to 325°. Then place the desired amount of healthy pop tarts on a baking sheet. Bake for 5-10 minutes, or until heated through.
The second method for reheating is quicker, but may leave your healthy pop tart a bit soggy. First, place the desired amount of healthy pop tarts on a microwave safe plate. Heat for 15-20 seconds, or until heated through.
